What this table is
The everyday recipes are for Tuesday. This page is for the anniversary, the holiday table, the dinner where you want people to put their phones down. One hundred recipes in the tasting-menu tradition of serious restaurants: raw courses that depend on knife work, soups passed twice through a sieve, fish poached in olive oil at 125 degrees, a whole cauliflower carried in and carved, and desserts sweetened by fruit and a spoon of honey.
Every one of them is Earth Diet to the bone. The fat is olive oil, the sweetness is fruit, the cream is beans or nuts or cultured kefir, the grains are intact, and the fish is cooked below the boil so its omega-3s survive. The page reads like a tasting menu: open a dish for the Harvest 100 foods it draws on, the ingredients with quantities, the numbered method, a plating note, and a "Why it fits" line that explains the nutritional logic in a sentence. The Toolbox course holds the green oils, nut creams, and seed crumbles that make a home plate look like a restaurant plate.
Luxury is technique and restraint, not butter and sugar. Cook the fish gently, pass the soup through a sieve, make the oils the day before, plate with one color in each zone, and stop one garnish early.
Open any recipe on this page, select its text, and paste it into a note or a grocery list; the downloads give you all one hundred at once.

Every one can be made ahead, which is the real secret of a relaxed host.

VIFrom the Sea
Fish cooked below the boil · 10 recipesThe Earth Diet's protein, at its most refined: salmon poached in olive oil at 125°F, trout roasted whole on the bone, sardines grilled over a hot fire, oysters under a spinach crust. The techniques are classical; the butter is gone and the omega-3s are intact because nothing here is cooked hard.
